can anybody tell me if there is a way of turning off the little notification at the bottom of the screen whenever it connects to a WiFi signal

Sorry but unless you are rooted and want to mess with an SQL Editor like the link below, there is no way to remove it. I know the link doesn't tackle the same issue you have but because its a system notification, that is the only way to remove it. Or just get a ROM and that will come with its own system files and notifications.
